Every hiring manager I've spoken with cares more about three real, working projects than a list of completed courses.
The projects don't need to be original ideas — a clone of an app you use daily, built well and explained clearly, does more for you than an unfinished 'unique' idea.
Your GitHub profile is a second resume
Commit history, README quality, and whether your code is actually readable get checked far more often than students expect.
Clean up before you apply — pin your best 4-6 repos and make sure each one has a proper README explaining what it does and why.
